Summertime Salad

This fresh salad is bursting with your favorite mix of summertime flavors! This recipe is a flavorful, refreshing side dish.


For the salad:

  • 12 cooked shrimp
  • 1 bunch of kale, chopped
  • 1 cup of spinach, chopped 
  • 1 cup fresh blueberries
  • ½ tomato, cubed
  • ¼ red onion, thinly chopped
  • 1/3 cup crumbled feta cheese
  • salt and pepper to taste

For the raspberry Vinaigrette dressing:

  • ½ cup vegetable oil
  • ½ cup raspberry wine vinegar
  • ½ cup white sugar
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon dried oregano
  • salt and pepper to taste


  • In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, mustard, oregano, and pepper. Shake well. Adjust and add seasoning to your liking.
  • In a large bowl, add chopped kale, spinach, onions, and tomatoes.
  • Top with blueberries, shrimp, and crumbled feta cheese.
  • Drizzle salad with raspberry vinaigrette dressing and serve.
