Summertime Salad
This fresh salad is bursting with your favorite mix of summertime flavors! This recipe is a flavorful, refreshing side dish.
Ingredients:
For the salad:
- 12 cooked shrimp
- 1 bunch of kale, chopped
- 1 cup of spinach, chopped
- 1 cup fresh blueberries
- ½ tomato, cubed
- ¼ red onion, thinly chopped
- 1/3 cup crumbled feta cheese
- salt and pepper to taste
For the raspberry Vinaigrette dressing:
- ½ cup vegetable oil
- ½ cup raspberry wine vinegar
- ½ cup white sugar
- 2 teaspoons Dijon mustard
- ¼ teaspoon dried oregano
- salt and pepper to taste
Directions:
- In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, mustard, oregano, and pepper. Shake well. Adjust and add seasoning to your liking.
- In a large bowl, add chopped kale, spinach, onions, and tomatoes.
- Top with blueberries, shrimp, and crumbled feta cheese.
- Drizzle salad with raspberry vinaigrette dressing and serve.
